Detailed Recipes

Meat Curry (Mutton or Beef)

Ingredients:

  • 500g mutton or beef, cut into pieces
  • 3 tbsp Meat Masala
  • 2 onions, finely chopped
  • 2 tomatoes, pureed
  • 1 tbsp ginger-garlic paste
  • 1/2 tsp turmeric powder
  • 1 tsp red chili powder (optional, for extra heat)
  • 2-3 tbsp oil or ghee
  • Salt to taste
  • Fresh coriander leaves, for garnish
  • 1 cup water (or as needed)

Instructions:

  1. Cook Onions: In a heavy-bottomed pan, heat oil/ghee and sauté onions until golden brown.
  2. Add Ginger-Garlic Paste: Stir in ginger-garlic paste and sauté until aromatic.
  3. Add Tomatoes and Spices: Mix in tomato puree, turmeric powder, Meat Masala, red chili powder, and salt. Cook until the oil separates.
  4. Add Meat: Add the meat pieces and cook on high heat for a few minutes. Then, reduce the heat and simmer until the meat is tender (you may use a pressure cooker to speed up the process).
  5. Adjust Gravy: Add water to achieve the desired consistency of the gravy and bring to a boil. Then simmer until the meat is fully cooked.
  6. Garnish and Serve: Garnish with fresh coriander leaves. Serve hot with rice, naan, or rotis.

Keema (Minced Meat) Masala

Ingredients:

  • 500g minced meat (mutton, beef, or chicken)
  • 2 tbsp Meat Masala
  • 1 onion, finely chopped
  • 1 tomato, chopped
  • 1 tbsp ginger-garlic paste
  • 1/2 tsp turmeric powder
  • 2-3 tbsp oil
  • Salt to taste
  • Fresh coriander leaves, chopped
  • 1/2 cup peas (optional)

Instructions:

  1. Sauté Onions: Heat oil in a pan and fry the onions until they turn golden brown.
  2. Add Ginger-Garlic Paste and Tomatoes: Add ginger-garlic paste and tomatoes, and cook until the tomatoes are mushy.
  3. Add Spices: Stir in turmeric powder and Meat Masala, and cook for a minute.
  4. Cook Minced Meat: Add the minced meat and salt, breaking any lumps with a spoon. Cook on medium heat until the meat is browned.
  5. Add Peas: If using peas, add them now and cook until they are tender.
  6. Simmer: Add a little water if the mixture is too dry, cover, and simmer for about 20 minutes, stirring occasionally.
  7. Garnish and Serve: Garnish with chopped coriander leaves. Serve hot with bread or as a filling for sandwiches or wraps.
