Chicken Curry

 

Ingredients:

  • 500g Chicken, cut into pieces
  • 2 Onions, finely chopped
  • 2 Tomatoes, pureed
  • 2 tsp Ginger-Garlic paste
  • 1 tsp Turmeric powder
  • 1 tsp Red chili powder
  • 2 tsp Coriander powder
  • 1 tsp Garam Masala
  • Salt to taste
  • 2 tbsp Vegetable oil
  • Fresh coriander leaves for garnish

 

Instructions:

  1. Marinate Chicken: Mix chicken pieces with turmeric, red chili powder, and salt. Set aside for 30 minutes.
  2. Cook Onions: In a pan, heat oil and sauté onions until golden brown.
  3. Add Ginger-Garlic Paste: Add ginger-garlic paste to onions and fry for a minute.
  4. Cook Tomatoes: Add pureed tomatoes and cook until oil separates.
  5. Add Chicken: Add the marinated chicken and cook on high heat for 5 minutes.
  6. Add Spices: Lower the heat, add coriander powder, and cook covered until the chicken is tender.
  7. Final Touch: Sprinkle garam masala and cook for another minute.
  8. Garnish: Garnish with fresh coriander leaves and serve with rice or bread.

 

Vegetable Biryani

 

Ingredients:

  • 2 cups Basmati rice
  • 1 cup Mixed vegetables (carrots, peas, beans, cauliflower)
  • 2 Onions, sliced
  • 1 Tomato, chopped
  • 2 tbsp Yogurt
  • 1 tsp Ginger-Garlic paste
  • ½ tsp Turmeric powder
  • 1 tsp Garam Masala
  • 4 cups Water
  • 3 tbsp Vegetable oil
  • Salt to taste
  • Mint and coriander leaves
  • Saffron strands soaked in milk (optional)

 

Instructions:

  1. Prepare Rice: Wash and soak basmati rice for 20 minutes. Drain.
  2. Cook Vegetables: In a pan, heat oil, add onions and fry until golden. Add ginger-garlic paste, tomato, and cook for 2 minutes. Add mixed vegetables, turmeric, and salt. Cook until vegetables are half done.
  3. Add Rice: Add drained rice to the vegetables and sauté for a minute.
  4. Add Water and Spices: Add 4 cups of water, bring to a boil. Add yogurt, garam masala, mint, and coriander leaves. Stir gently.
  5. Cook the Biryani: Cover and cook on a low flame until the rice is done and the water is absorbed.
  6. Garnish: Garnish with saffron-milk mixture for a rich flavor and color.
  7. Serve: Serve hot with raita or curry.
