Tandoori Chicken


Ingredients:

  • 1 kg Chicken (cut into pieces)
  • 3 tbsp Tandoori Masala
  • 2 tbsp Lemon juice
  • 1 cup Yogurt
  • 2 tsp Ginger-Garlic paste
  • Salt to taste
  • Red food coloring (optional)
  • 2 tbsp Mustard oil or Vegetable oil
  • Fresh coriander and slices of lemon for garnish

Instructions:

  1. Marinate Chicken: Clean the chicken and make incisions. Mix lemon juice, tandoori masala, ginger-garlic paste, salt, yogurt, and oil in a bowl. Add a pinch of red food coloring for the traditional red hue (optional). Marinate the chicken in this mixture for at least 3 hours or preferably overnight in the refrigerator.
  2. Preheat Oven/Grill: Preheat your oven or grill to a high temperature (about 200°C or 400°F).
  3. Cook Chicken: Place the chicken on a grill rack or a baking tray. Cook for about 20-30 minutes or until the chicken is cooked through and has a nice char on the edges. Turn the pieces halfway through cooking and baste with oil or butter.
  4. Garnish and Serve: Garnish with fresh coriander leaves and lemon slices. Serve with mint chutney and salad.

 

Tandoori Paneer Tikka

 

Ingredients:

  • 500g Paneer (cubed)
  • 2 tbsp Tandoori Masala
  • 1 cup Yogurt (thick)
  • 1 tbsp Ginger-Garlic paste
  • 1 tbsp Lemon juice
  • Salt to taste
  • 1 Bell pepper (cut into squares)
  • 1 Onion (cut into squares)
  • Oil for brushing
  • Chaat masala (for sprinkling)

Instructions:

  1. Marinate Paneer and Vegetables: In a bowl, mix yogurt, tandoori masala, ginger-garlic paste, lemon juice, and salt. Add paneer cubes, bell pepper, and onion. Marinate for at least 1 hour.
  2. Skewer the Paneer and Vegetables: Thread the marinated paneer, bell peppers, and onions onto skewers.
  3. Grill: Preheat the grill or oven to 200°C (400°F). Place the skewers on the grill or in the oven. Grill for about 15-20 minutes, turning occasionally and brushing with oil.
  4. Serve: Sprinkle chaat masala over the grilled paneer tikka. Serve hot with mint chutney.
