Detailed Recipes

Sambar (Lentil-based Vegetable Stew)


Ingredients:

  • 1 cup Toor dal (split pigeon peas)
  • 2 cups mixed vegetables (carrots, drumsticks, pumpkin, eggplant, etc.), chopped
  • 1 onion, sliced
  • 2 tomatoes, chopped
  • 2-3 tbsp Sambar Masala
  • 1 tsp turmeric powder
  • Tamarind pulp, to taste
  • Mustard seeds, curry leaves, and asafoetida (hing) for tempering
  • Salt to taste
  • 2 tbsp oil
  • Fresh coriander leaves for garnish

Instructions:

  1. Cook Lentils: Rinse toor dal and cook with enough water until soft and mushy. Mash slightly.
  2. Boil Vegetables: Add the chopped vegetables, onions, tomatoes, turmeric powder, and salt to the dal. Add water if needed and cook until the vegetables are tender.
  3. Add Sambar Masala: Stir in the Sambar Masala and tamarind pulp. Simmer for 10-15 minutes.
  4. Tempering: In a small pan, heat oil, add mustard seeds, curry leaves, and a pinch of asafoetida. Once the mustard seeds start to splutter, pour this over the sambar.
  5. Garnish and Serve: Garnish with fresh coriander leaves. Serve hot with rice, idli, or dosa.

Sambar Rice (Sambar Sadam)


Ingredients:

  • 1 cup rice
  • ½ cup Toor dal
  • 1½ cups mixed vegetables (beans, carrots, peas, etc.)
  • 2-3 tbsp Sambar Masala
  • 1 onion, chopped
  • 1 tomato, chopped
  • 1 tsp tamarind paste
  • Mustard seeds, curry leaves for tempering
  • 2 tbsp oil
  • Salt to taste

Instructions:

  1. Cook Rice and Lentils: Cook rice and toor dal together in a pressure cooker or pot until both are soft and mushy.
  2. Cook Vegetables: In a pan, heat oil, add mustard seeds, and curry leaves. Add onions and sauté until translucent. Add chopped vegetables and tomatoes, and cook until they are soft.
  3. Combine: Add the cooked rice and dal mixture to the vegetables. Add Sambar Masala, tamarind paste, and salt. Add water if needed to adjust the consistency.
  4. Simmer: Let everything simmer together for 10-15 minutes, stirring occasionally.
  5. Serve: Serve hot, garnished with fresh herbs or a dollop of ghee.
