Chole (Chickpea Curry)


Ingredients:

  • 2 cups chickpeas, soaked overnight and boiled
  • 2 onions, finely chopped
  • 2 tomatoes, pureed
  • 2-3 tbsp Chole Masala
  • 1 tsp cumin seeds
  • 1 tsp ginger-garlic paste
  • 1 tsp amchur (dry mango powder)
  • 1/2 tsp garam masala
  • 1-2 green chilies, chopped
  • 2 tbsp oil
  • Salt to taste
  • Fresh coriander leaves, chopped
  • Lemon wedges for garnish

Instructions:

  1. Sauté Onions: Heat oil in a pan. Add cumin seeds and let them splutter. Add onions and sauté until golden brown.
  2. Add Spices: Add ginger-garlic paste, green chilies, and tomato puree. Cook until the oil separates.
  3. Add Chickpeas and Spices: Add boiled chickpeas, Chole Masala, amchur, garam masala, and salt. Mix well.
  4. Simmer: Add water to get the desired consistency. Simmer for 20-30 minutes on low heat.
  5. Garnish: Garnish with coriander leaves and a squeeze of lemon juice.
  6. Serve: Serve hot with Bhature, Naan, or Rice.

 

Chole Pulao (Spiced Chickpea Rice)


Ingredients:

  • 1 cup Basmati rice, soaked for 20 minutes
  • 1 cup boiled chickpeas
  • 1 onion, sliced
  • 1 tomato, chopped
  • 2 tbsp Chole Masala
  • 1 tsp cumin seeds
  • 2 cloves, 1 bay leaf, 1 cinnamon stick
  • 2 tbsp oil or ghee
  • Salt to taste
  • 2 cups water
  • Fresh coriander leaves, chopped

Instructions:

  1. Sauté Spices: In a pan, heat oil or ghee. Add cumin seeds, cloves, bay leaf, and cinnamon. Sauté until aromatic.
  2. Cook Onions: Add onions and sauté until translucent.
  3. Add Tomato and Spices: Add chopped tomato and Chole Masala. Cook until the tomatoes soften.
  4. Add Rice and Chickpeas: Add the soaked and drained rice, boiled chickpeas, and salt. Stir gently to mix.
  5. Add Water: Pour in water and bring to a boil. Then, reduce the heat to low, cover, and simmer until the rice is cooked and water is absorbed.
  6. Garnish: Garnish with fresh coriander leaves.
  7. Serve: Serve hot as a flavorful one-pot meal.
